Located in the Western province of Rwanda, Rwamatamu’s coffee farm and washing station are in amongst a stunning landscape of rolling hills around Lake Kivu in Nyamasheke District.
Cherries are sorted and split into grades at the washing station to remove defective, under-, and over-ripe cherries. They are then mechanically depulped according to their quality grade, with the machinery being washed between groups for consistency. The pulped coffee is left to ferment for 8-12 hours, transferred to dry on raised beds, then sorted once more and turned regularly over 17-25 days until the ideal 11% moisture is reached.
The Nyamasheke District provides a tropical highland climate where arabica coffee can flourish. Situated up to 2,000m.a.s.l on rich volcanic soil, the coffee is harvested between January and March.
